Some European countries are now making wine like the USA, because it is cheap and fast, and they aren’t allowed to sell it in their country because it is not “clean”. Childs Wines are made according to the Italian tradition that dates back to the Roman days. No chemicals, lots of time and quality fruit and the result is superior!
a. Ninety-nine percent of wines start to finish in 30 days using chemicals—ours takes 12-14 months as the yeast keeps converting the fruit’s sugar to alcohol until all the sugar is gone, and then the yeast dies and the wine is done. This makes for a full-bodied wine of about 14% alcohol, which is why Romans watered their wine to balance hydration with relaxation. We use a full glass of ice and half a glass of wine to achieve that balance.
b. Our fruit is clean so when we press it, residual fungicides and insecticides are not added to the ingredients as often happens with products traditionally made, commercially mass produced for the masses. We press the fruit we grow frozen, so each bottle has around $15 to $20 worth of fruit in it.
